Sheet Pan Pancakes






Did you know you can make all your pancakes at once in a sheet pan?! Basically, you just pour pancake batter of your choice in a sheet pan to bake it. They are way fluffier to me and SO much easier. My recipe uses about 1.5C flour so I used a 1/4 sheet pan (9x13ish) but if you do double you can use a half sheet pan. This is the recipe I use:

Ingrdients:

1.5 C Flour
1/2 tsp Salt
3.5 tsp Baking Powder
1 tb (3 tsp) Sugar
4 tsp chia seeds (ground, optional)
1 Egg
1tsp of vanilla
3 tb oil
1.25 C Milk (I use almond and I never measure it)

Directions:

  1. I mix all the dry ingredients, then add the egg, vanilla, oil and slightly mix and then I slowly start pouring a little milk and mixing until it's the right consistency. Because I add chia seeds, I make it a bit thinner than normal bc it will thicken up with the seeds after it sits/cooks a bit. 
  2. Pour it into a 9x13 sheet pan that has been sprayed. There will barely be enough to cover the bottom, you might need to use a spatula to spread it to the corners.  OPTIONAL: sprinkle on some nuts, fruit (fresh or frozen), chocolate chips, etc. before baking. Pictured here we added frozen blueberries and frozen strawberries. 
  3. Bake at 425 for 15-20 minutes (mine took more like 20 but I think it was bc the "sliced" strawberries were halved at best, so it kept the batter cooler).
