16oz cream cheese (2 Blocks) (1/3 less fat)
16oz sour cream (fat free)
16oz mayonnaise (reduced fat)
2 C Shredded Italian Blend Cheese, or 1 C ea Mozzarella Shredded Parmesan, plus a little extra to sprinkle on top
3 TB garlic powder
2 TB jarred minced garlic
1 15oz can spinach, squeezed of its juices
Optional:
1 15oz can quartered artichoke hearts
1/2 cup fresh tomatoes, diced (about 1 Roma)
2-3 TB black pepper
Directions:
Mix the cream cheese, mayo, sour cream and garlic together. It's a lot easier to use an electric mixer, but a food processor would probably also work. It can be done by hand. Once that is well blended, add the shredded cheeses and mix well (this can be done with the mixer). Once that is well blended, add the spinach (this can be done with the mixer). Lastly, mix in the artichoke hearts by hand. At this point, you can eat it right now, put it in the fridge, or warm it up. You can sprinkle some cheese on top and put in a 350 oven until the cheeses are bubbling and the top is slightly browned. Or you can dump it in a slow cooker, top with cheese, put on high until the cheese are bubbling, then it turn it down to low while your guests eat from it.
