Quick n' Tasty Bruschetta

I came up with this recipe one day for my youngest sister, Maggie. She wanted some bruschetta after tasting the dish at my portfolio show. We were at my parents house, and I whipped it up based off of what was on hand. Ingredients: 3 bagels 3 cloves garlic 1 can diced tomatoes, drained 1 TB garlic powder 1 TB basil 1 TB balsamic vinegar 1 TB olive oil 1 TB Italian seasoning 1 tsp red pepper flakes 1 cup mozzarella cheese, grated Procedure: 1 Cut garlic cloves in half & rub the exposed sides onto the surface of the sliced bagels. Lightly toast bagels in the oven. 2 Drain the can of tomatoes. 3 Chop garlic & mix with tomatoes, balsamic vinegar, oil & spices in a bowl along with half of the mozzarella cheese. 4 Remove toast from oven. Add half of the remaining cheese evenly on bagels. Return to oven just long enough for cheese to melt but not brown. Remove from oven & spread the tomato mixture evenly over all of the bagels & top with the remaining cheese. Return to oven to melt the cheese & to heat the toppings. Servings: 6
