Creole Sausage and Rice





INGREDIENTS 
1 lb smoked sausage, cut into bite-size pieces 
10oz frozen peppers and onions
1tsp garlic powder
1/2 teaspoon creole seasoning (I make my own, recipe has been shared.  Also, i used a heaping half teaspoon and it came out a bit to spicy for Andy IMO so I just put a bunch of sour cream on his and mixed it up) 
1 (10 ounce) can rotel diced tomatoes with mild green chilies, undrained 
1 (15 ounce) can black beans, drained and rinsed 
2 tsp chicken bullion (or 2 cubes)
3 Cup water 
2 cup l rice, not instant 


In a large pot with a lid, heat medium heat. Spray with olive oil (or whatever) and add sausage to brown.  I sprinkled a little creole seasoning over it while it was browning.  Once it's done, add everything else.  Stir until combined. Bring to a boil, cover, and reduce heat to a simmer. Cook until rice is cooked through and mixture is thickened slightly (20 minutes).
