Ingredients:
4 bananas
1/2C
6 tsp of chia seeds (ground)
2 eggs
2 tsp or more of vanilla
Generous sprinkle of cinnamon
3C Old Fashioned Oats
1C raisins
1/3C of mini chocolate chips
Procedure:
Mash bananas and add egg and vanilla and mix well. Add everything else except the chocolate chips and mix. Sprinkle chocolate chips over the top about one thin layer and mix in. Use a cookie scoop and you should get around 48 cookies. It's better if you let the batter sit for a few minutes so the oats and chia can absorb the liquid. I normally do 2 small pans with 4 across and 6 down and that normally leaves enough room to add extras in between if I have to. Bake at 375 for 10-12 minutes (I did 12). (This is doubled what from I did the first time, so you can easily cut it in half or even 1/4 if you only have one banana)
