Stuffed Pepper Casserole




I couldn't find a single recipe that I especially liked, so I made this one up and I am trying it tonight.  At the last minute I doubled up on the tomatoes but it came out a bit too "tomato-y" to me so I think next time just 1x8oz can.





Ingredients

  • 1 lb ground turkey
  • 6 Carrots, purred/ground
  • 1 10oz bag of frozen green peppers
  • 1 medium onion diced
  • 1.5 tablespoon Italian Seasoning
  • 1 tablespoon garlic powder
  • cups chicken broth/or water combined with 3 tsp (or 3 cubes) bullion
  • 1 15 oz can fire-roasted diced tomatoes 
  • 2 8 oz can tomato sauce (1 15oz or whatever would be fine too I just had 8oz cans) SEE NOTES ABOVE
  • 2 Tbs Worchestershire
  • cup long-grain white rice

Instructions

  • In a high-sided pan add your ground turkey, carrot, and spices. Mix well and cook until it starts to brown, then add in the onion. Cook until the turkey is brown and the onion is translucent.  
  • Add in your broth, tomatoes, tomato sauce, and Worcestershire, and frozen peppers then stir to combine then bring to a boil.
  • Add in your rice and stir to combine, cover and simmer for 20-25 minutes until rice is tender and juices are mainly soaked up.
  • Some recipes suggest topping with cheese but that doesn't work for my family's current needs so we're skipping it.
