I came across a recipe for something called Jailhouse rice and looked up some different ways people make it. Some do beef, some do sausage, some do a combination. Some do cream of celery, some cream of mushroom, Some beef broth, some chicken. Most of them only use celery, and a few add cheese. Also, I've seen it cooked on the stove as a one-pot meal as well as baked in the oven as a casserole. I wanted to do it in the IP to be easy, and I wanted to have double the rice as most recipes, and I wanted peppers. Most recipes didn't have any added spices but after I was done I remembered seeing one with Thyme so I might try that next time or just use Italian seasoning instead of only Parsley. So here's what I came up with for lunch today:
Ingredients:
1 pound ground turkey
4 medium carrots, chopped in the food processor until they are as smooth as they're going to get
Garlic salt with parsley, garlic powder, onion powder, and parsley to taste
1-10oz bag frozen seasoning blend (peppers, onions, parsley, celery)
1 can cream of mushroom soup
3 1/2 cups chicken broth (I used water and bouillon powder)
2 cup rice
Steps:
- Saute turkey with carrots and spices, mixing well as it cooks. Taste it at the end to make sure it's to your liking.
- Pour in everything else except for rice and stir well
- Sprinkle rice over the top of all ingredients and press it into the liquid
- Set Instant Pot on manual for 10 minutes. When done, quick release. Stir and let sit for about 5 minutes then serve
It's really creamy and delicious, almost like cheesy rice without cheese. I think it does need the extra spices/flavor that would come from maybe 1tsp on the meat and 2tsp into the water.
