Ingredients:
1 12oz bag of steamable veggies
3 eggs
1/2 C flour
Directions:
Cook veggies according to directions. You can use any mix or single veggie you want, I did California medley. Snip a corner of the bag and drain any liquid and add the veggies to your food processor. You should really wait for it to cool down but I didn't have time so I put it in the fridge for 5 minutes so it didn't cook the eggs. Pulse the veggies until they're roughly chopped. Then add the egg and flour and pulse again until it's mixed.
Pour 1/4 C at a time into a pan heated at medium heat, flip around 2-3 minutes on each side. I just sprayed the pan.
NOTES: You should add some garlic powder and salt, maybe other seasonings, but I didn't because of Andy. You should also pour enough oil in the pan to coat the bottom, but I just sprayed with olive oil really well because they were for Andy. Next time I want to experiment adding potato flakes instead of flour for the extra fiber. These are delicious and I wish I was able to eat more lol. It makes 8 1/4c sized. Most people roughly chop their veggies too but I got mine really fine for Andy because he isn't eating them now and if a big hunk is in his mouth he'll get upset and swallow it whole and sometimes that gags him lol.
