Ingredients
- 3 cups fresh or frozen broccoli florets (I used a 12oz steam bag)
- 2 large eggs
- 1/4 tsp onion powder
- 1/2 cup grated cheddar cheese or grated parmesan cheese
- 2/3 cup italian bread crumbs
- 1 tbsp Italian seasoning
- 1/4 tsp garlic powder
- 1/2 tsp sea salt (I omitted it)
Instructions
- I steamed the broccoli following the package instructions. You could put it through a strainer and run cold water over it if you're ready to make them, but I just cut a hole in the bag to drain and then put them in a fridge on a plate because I did it during lunch so they would be ready for me later.
- Run broccoli through your food processor until finely chopped.
- Add the remaining ingredients and pulse to mix. It didn't' totally do it so I removed the blade and quickly mixed the rest by hand.
- Using a heaping tablespoon or small cookie scoop, portion out the broccoli mixture into small balls. I used my cookie scoop and got 31 pieces. You can then roll them into balls, or shape into tots, or fries. I was doing tots but they looked kind of like a hot dog and a choking hazard, so I rolled them out skinner.
- You can bake for 20-25 minutes at 400 or until golden brown on top, being sure to flip the tots halfway through baking. I cooked them at 400 for 15 minutes in the air fryer, flipping them over when the machine told me to.
- Remove from the oven and enjoy hot with ketchup, ranch dressing, or another of your favorite dipping sauces.
NOTE: I shaped mine in the afternoon so they would be ready to go in the air fryer that evening. It might help them keep their shape when cooking, IDK, but it didn't hurt it lol.
