Pressure Cooker Burrito Bowl



INGREDIENTS: 

1 pound boneless, skinless chicken breasts, cut into 1-inch strips 
1 heaping tb taco seasoning 
2 cup water 
2 tsp or 2 cubes bullion powder 
1 (15-ounce) can corn kernels, drained 
1 (15-ounce) can black beans, drained and rinsed 
1 can fire-roasted diced tomatoes 
1 can Rotel tomatoes 
2 cup white rice 
2 tablespoons dried cilantro leaves 

DIRECTIONS: 

Add chicken, taco seasoning, chicken bullion and water to a Pressure Cooker and gently toss to combine. Stir in corn, black beans, tomatoes. Without stirring, add rice, but be sure to gently push the rice under the water. Select manual setting; adjust the pressure to high, and set time for 10 minutes. When finished cooking, quick-release pressure according to manufacturer’s directions. Serve immediately, garnished with cheese and sour cream, if desired.
