Toddler Banana Pancakes


I made this recipe up fo my son when he was first eating soilds.  First I cooked them on the stove as regular pancakes.  Then I was making them into a waffle.  After it became the only thing he would eat for breakfast for about a year, I started baking them in a sheet pan so I could get 12 of his serving size done at once.  I would freeze them and defrost in the toaster.  After he got older, I had to change it to where the same recipe amount was only 8 servings for him instead of 12 because he was eating more.  They pretty much taste like banana bread, just not quite as sweet. I often mixed them in the blender.


Ingredients: 

6 bananas 
6 eggs 
2 cups oatmeal 
Sprinkle of cinnamon 

Servings: 12


Directions:

Beat eggs, then mix with mashed bananas and cinnamon, then add oatmeal. Pour into 9x13 sheet pan, bake at 375for 25 minutes. I put it on foil so it would be easy to take out and cut up.
