These are sot of like salmon patties, but much cheaper and the black beans give it a really good flavor. I made a huge family-sized batch tonight, but you can easily cut this down to the size of 1 can of tuna.
Ingredients:
4 5oz Cans Tuna
4 eggs
2 TB garlic powder (I would probably double this if I weren't using Roasted Garlic bread crumbs)
1 TB cumin
1 cup bread crumbs (I used Kroger Brand Roasted Garlic)
2 15oz cans of black beans
Mix together and form into patties. Should make about 16 small ones or 8 larger ones. I ended up with 18 tonight.
I haven't cooked them yet, but you would then just fry them up in a pan over medium heat. I like to leave them in the fridge for a bit after they're formed bc it makes them easier to do handle when cooking. You could also add onions or even green onions. I was going to dice an onion but I forgot until I was done mixing and didn't want to have to mix again bc I was feeling lazy.
