Ingredients:
2 boneless skinless chicken breasts
1-3 TB Lemon Juice
1-3 TB Olive Oil
1 tsp Garlic Powder (this is just for the marinade, but next time I will add more to the whole mixture when I add the cream cheese bc it wasn't garlicy enough for me)
1 Onion, chopped,
1 head of Garlic, chopped
1 Can Spinach
1 8oz Block Cream Cheese (I used the 1/3 less fat)
1/4 Cup of Chicken broth (I used 1/2 cup water with 1/2 tsp bullion powder, but next time I would double this or add some sour cream or maybe milk or cream to make it a little creamier)
In the morning before I got Andy up, I sliced the chicken very thin. I have learned I can do this on a plate if I am careful and then I can add whatever marinade and cover with plastic wrap so I don't have to make a cutting board have chicken germs in addition to a plate. After it was sliced, I didn't measure but I poured a small amount of olive oil and lemon juice over it. I was just trying to do enough to coat it without leaving too much on the plate. I covered with a generous sprinkle of garlic powder then used my fingers to toss all the pieces, covered and put them in the fridge.
During his first nap, I chopped the onion and garlic, put them in a bowl in the fridge. I also measured out the amount of instant mashed potato flakes I wanted and put it in the container I would microwave it in and set it aside. I also go out the bullion powder, and put the spinach in a paper towel-lined strainer in the sink, covered with more paper towels, and put a can on top to help squeeze out the moisture.
During his last nap, I took a shower, and then came to the kitchen. I measured out the milk/water for the potatoes and added the butter. I opened the cream cheese and put it next to the stove so it would soften as I cook, and measured some water and bullion powder.
I used a big pot instead of a skillet bc I wanted the wide surface area so things would brown and not steam, but I didn't want to risk it being too full and having a mess to clean up since I never made it before and didn't know if it would fit. Now that I have, I think it would fit.
I put the pot on the stove on high, sprayed with olive oil, and started to brown the chicken
I cooked it until there was no more liquid and it had a nice caramel color
After that I added the onion and garlic. I did not add more oil, just moved it around fast until they were translucent
After that I poured the bullion in and deglazed the pan, but it didn't really have much to deglaze since it was nonstick. I cooked that until the liquid cooked down to about half then added the spinach
And then the cream cheese, and mixed until it was fully melted and well mixed. At this point, I put the lid on so it would stay warm.
I poured the milk/water into the potatoes and stirred. Aaron walked in. I told him dinner would be ready in 5 minutes and put the potatoes in the microwave for 5 minutes. When there was about a minute left, I heard something and looked down and Andy was awake so we weren't able to eat dinner before he got up. I just put bowls/forks and the dinner on the table and went and got Andy and we all ate together.It's not very pretty but it tastes like my Spinach Dip almost but with chicken and onions and a more spinach taste (my spinach dip is the same amount of Spinach with I think 8oz each cream cheese, mayo and sour cream and then a crap-ton of garlic powder and a bag of mozzarella or a mix of mozzarella and parm or whatever Italian blend)
