Black Bean Soup

I just made this up from what we had in the cabinet.  If we had corn I would have added that too.

Ingredients:

2 cans black beans, rinsed and drained
1 can fire-roasted diced tomatoes
4 C water
4 Chicken Bullion Cubes
I didn't measure but added garlic powder, onion powder, cumin, chili powder, chipolata chili powder, dried oregano

Directions:

Throw everything in a pot and bring to a boil.  While you're waiting for that to happen, use a potato masher to mash up about half the beans to help thicken the soup.  Simmer for 10-15 minutes.  Serve as-is or with chips, sour cream, and/or cheese.
