Magic Shell Ice Cream Topping (Coconut Oil)

Ingredients:
As many servings of chocolate chips as you want (I normally use 4 spoonfuls, using the spoons we will be eating our ice cream with)
Half as much coconut oil as you have chocolate chips, while in solid form

Servings:
As many as you please, but if you follow my guideline using the 4 spoonfuls above, it will be enough for 2-3 bowls of ice cream.

 Procedure:

You can heat this in a double boiler.  You can also make this up in large quantities and store in the refrigerator, but then you will have to heat it up each time you want to use it (coconut oil is a solid below 76 degrees and is a liquid above.. so this will be mostly a solid chunk until you re-melt it), so I just make up individual servings and do the whole thing in the microwave.  I put everything in a microwave safe bowl and set the microwave to 1:30 on 50% power, and then I stop and stir it every 15 seconds until I get the consistency I want.  I normally get about there around 1 minute, but then I usually stop and prepare some fresh sorbet of some sort, then come back and it once or twice more before I pour over the top.

  1. Oh I love coconut oil and putting it in ice cream is even more favorable since it is my favorite dessert.
