Spinach Dip


I made this recipe at my parents house one night when my mom and I had a craving for spinach dip. It's quick and delicious, and I serve it all of my parties. It's good with chips, crackers, or chunks of french bread, or even in a bread bowl!


Ingredients:

2/3 cup cream cheese (1/3 less fat)
2/3 cup sour cream (fat free)
2/3 cup mayonnaise (reduced fat)
1/2 cup Parmesan cheese (shredded)
1/2 cup mozzarella cheese (shredded)
4 TB garlic powder
1 (8oz) package of frozen spinach, thawed and squeezed of its juices (8 oz)
1/2 cup fresh tomatoes, diced (about 1 Roma)

Procedure:

1 Combine all ingredients except tomatoes. Place in shallow casserole dish. You can either bake the dip for about 15-20 minutes at 325 F but I have also found that you can just heat it in the microwave for a few minutes. After it's ready sprinkle tomatoes and a little more of the Parmesan on top & serve with french bread or tortilla chips.
