2 pounds boneless skinless chicken thighs or breasts (I used Chicken Breasts)
2TB Olive Oil
1.5TB Basalmic Vinegar
1/2 to 1 cup of your favorite Caesar dressing
1/2 cup grated Parmesan cheese
2 TB of dried parsley
1/2 TB ground pepper
Lettuce or cucumber slices to top your sandwich, and buns
Directions:
Mix the olive oil and vinegar together in your crock pot. Add chicken and turn to coat, cover and cook on low heat for 4-6 hours, or until you are almost ready to eat.
Remove chicken from cooker using a slotted spoon and drain the water from the slow cooker. Use a plastic spoon to break the chicken up into small pieces.
Place chicken back in the cooker and pour dressing, Parmesan cheese, parsley, and pepper over the top. Stir until mixed evenly. Cover and cook on high heat for 30 minutes or until mixture is hot.
Spoon mixture onto bun and top with greens. Enjoy!
