Cinnamon Raisin Bread in the bread machine



This is mom's recipe with her notes!!!

1 1/4 cup +2 TB water (80 degree) (1 1/4 cup + 2 TB)
2 Tbs Oil
3 Tbs brown sugar, packed
2 tsp salt 
2 Tbs dry milk 
1 TB Ground Cinnamon
4 cups bread flour (I use all purpose)
2/3 cup pecan pieces
2/3 cup raisins
2 1/4 tsp active dry yeast

Use a liquid measuring cup to measure the water (80°F/27°C) and pour into the Bread Pan. (Its winter. Right now I turn on the sink until the water gets hot to the touch then pour it into the bread pan & then test the temp. with a thermometer. That will usually bring it down to 80 just by putting it into the pan. I think the pan is cool & brings the water temperature down) Use a measuring spoon to measure the oil and add to the Bread Pan. Use a measuring spoon to measure the sugar, salt and dry milk; level off with the straight edge of a knife and add to the Bread Pan. Lightly spoon bread flour into a dry measuring cup, level off with the straight edge of a knife and add to the Bread Pan. Go ahead & add in the rasins & the nuts. You can wait to add them after the machine beeps for adding extra ingedients but it will still work if you you add it all in the beginning which is the way I do it. Carefully measure yeast with a measuring spoon; level off with the straight edge of a knife and add to the Bread Pan. Check dough after it starts mixing. I find that sometimes you may need to add a few tablespoons of water to get the flour to mix in all of the way. Lately I've been starting out with 1 1/3 cups water because the dough doesn't mix well & is dry. Maybe that's because I don't measure as exact as I should. Watch the dough after a few minutes to see if all of the flour is incorporated. If not ad water a tablespoon at the time just until it starts to stay together. You don't want it too sticky. It will still look kind of dry, you just want it all to form a ball. It's okay if you see a few raisins or nuts on the edges. They will eventually all mix in.

If using Delay Bake Timer, make sure yeast is on top of bread flour, away from liquids or other ingredients. Usually you make a well to put itin to keep it separate. Make sure the raisins & nuts are added at the edges. Do not let raisins come in contact with liquids or they will absorb it & swell up.

Choose White Bread or Basic button, whichever your machine has. Choose Crust Color. Press the START Button for an immediate start. The whole process takes about 3 hours.
