Low Fat Banana Spice Bread

This banana bread is only a slight adaptation from a plain banana bread.  Has a very "holiday" flavor to it.  I make this loaf every time we let the last 1-2 bananas get too ripe.



Ingredients
1 1/2 cups self-rising flour
3/4 cup white sugar
1 1/4 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground cloves
1 Egg (or 2 egg whites, or whichever egg beaters)
1 cup banana, mashed (1-2 bananas)
1/4 cup applesauce






Directions
Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.In a large bowl, stir together flour, sugar, baking powder, cloves, ginger and cinnamon. In a seperate bowl add egg, bananas and applesauce. Combine. If the dough seems thick or dry, add more applesauce. If it's especially dry, add water.Bake in preheated oven for 50 to 55 minutes, until a toothpick inserted into center of loaf comes out clean. Turn out onto wire rack and allow to cool before slicing.
Last time I used 1 banana and it was too dry to even mix so I had to add water and apple sauce.
