Slow Cooker Chicken Parmesan with "Zoodles"

Ingredients:

Chicken Parmesan:
2-4 cuts of meat you could do chicken breasts, pork chops, whatever you like
1 Cup Italian bread crumbs
1/4 Cup grated parmesan
1 TB garlic powder
1 egg, beaten
1/4 cup shredded mozzarella
1 jar of your favorite marinara sauce, I used Kroger brand with ramano

Zoodles:
1-2 zuchinni
1/2 carrot
1/4 Cup butter
2 garlic cloves, crushed or put through a press
1/2 TB Italian seasoning
1/2 TB parsley
Salt and pepper to taste

Servings: 2-4, depending on how much meat you use

Procedure:

Add a little olive oil to the bottom of the slow cooker. Mix the bread crumbs with spices and parm. Dredge the chicken (or whatever) through the egg, then in the bread crumbs, and then do it again. Carefully place the meat in the bottom of the slow cooker. Pour the sauce around meat. Cover the meat with the mozzarella and cook on low for 2-4 hours or high for 4-6.

When you are almost ready to eat, get out the carrot and zuchinni. Cut with a juilienne slicer to make noodle shapes. If you don't have one, you can use a vegetable Peeler and slice the peels. On the zuchinni, stop when you get close to the seeds. Cut the rest into large chunks and toss into the slow cooker. Be sure to keep the carrot and zuchinni separated.

In a pan, add butter, garlic, and spices. Cook in low until garlic is cooked. You can reserve a little for garlic bread, if you want. Add the carrot and cook for 1-2 minutes until it softens, then add zuchinni. Be careful not to over cook, as you want them to come out closer to the consistency of pasta.

In a large bowl, add some of the "zoodles," top with a chicken breast (or whatever) and add some sauce and zuchinni chunks.
