Easy Peanut Butter Chocolate Chip Cookies

These cookies are quick and simple to make since you use a box of cake mix as the base. They are also a little bit healthier because instead of using oil, you use peanut butter. I like to use a box of Jiffy Cake Mix since they are smaller, but you could substitute half a box of any brand of cake mix instead. You can also try these with different flavors-chocolate cake mix is great!



Ingredients:

1 Box Jiffy White Cake Mix
1 tsp Baking Powder
1 large Egg
1/4 cup Peanut Butter
1/2 cup Chocolate Chips

Procedure:

1 Preheat oven to 350ยบ
2 Mix cake mix and baking powder in medium bowl. Melt peanut butter in microwave for 10-15 seconds
3 Add egg and peanut butter. Mix until dough is formed.
4 Add chocolate chips and mix together.
5 Drop onto cookie sheet with cookie dropper and bake for 8-10 minutes. (I always start checking them around 6 minutes). You can also put the whole recipe into a pie tin & bake a big cookie for about 13-15 min.
6 Makes 12-15 cookies
7 For a low fat version, substitute apple sauce for oil and one egg white for the egg, makes them much sweeter! Be sure to spray pan well with Pam so they won't stick.
8 For peanut butter cookies, substitute peanut butter for the oil.
9 Any goodies can be substituted for the M&M's such as chocolate chips. Be creative!
